And then there's pizza - and not just any pizza - traditional hand made Neapolitan pizza.
The dough is made using the age old 72 hour fermentation method known as 'biga' from the finest Italian Tipo '00' flour and stretched to order. Alessandro only uses the iconic 'San Marzano' tomatoes from the volcanic plains of the Campania region for the sauce and fresh Italian mozzarella for the toppings.
